And now, my unhealthy week. You know Superman had a really bad sinus infection all last week and by the time he went back to work on Friday and started feeling better, it hit me. I started feeling better Monday but even now I'm still not 100%. Anyway, last Saturday we drove to KY to meet my parents half way and had a nice high calorie lunch at Steak N Shake. We stopped at a Wendy's on our way back home for one of their new yummy Frosty's and by evening I was craving good Mexican food, so we went out to eat again.
Sunday we slept in and skipped church. I was so sick I tried getting up for the first church service, went back to sleep, tried to get up for the second church service, fell back to sleep, tried to wake up to watch our church online, fell back to sleep and finally got woke up around noon. Superman thought it would be a good idea to get outside and do some yard work. Our mower had been broken, but he fixed it and we really did need to get it done. I have to admit that getting out and doing some work did help me feel quite a bit better. Either that or all the extra sleep I obviously needed that morning! Sunday wasn't terribly unhealthy, besides the fact that by supper time we were still working outside and realized neither of us had eaten anything all day. We went out again, but to Subway. But we did treat ourselves to a little DQ later that night.
Monday I made manicotti, Tuesday we had Taco Bell, Wednesday Superman had leftover manicotti and I just snacked. And last night, after going from 90 degrees to 65 overnight, we had a warm comforting meal of beef stroganoff and mashed potatoes.
As if this blog post isn't unhealthy enough, I did not exercise once this week. I suppose you could count the hours of yard work and we did take the mile walk around the neighborhood one night, but that is it. I'm pretty sure I pulled a muscle in my back during the yard work and there is absolutely no way I could exercise this week. It's around my left shoulder blade so moving my arm, twisting my body, even coughing, sneezing and deep breathing makes pain shoot all the way through. Sometimes it goes down my side and feels like a broken rib. I told the chiropractor Wednesday when I went and of course if it's a muscle it will just take time. He didn't act like he was concerned with it being anything else.
I don't even want to know the nutritional information for the bread I learned to make this week. Dill bread. Mouthwatering. Superman's Mom makes it and I always hated it. When I was pregnant with Peanut I fell in love with it and still love it. I was craving it and I guess I thought we needed a little slice of home (get it? slice? it's bread?) so I made us some yummy dill bread. I won't post the recipe, but just let me know if you want it.
Can you handle one more unhealthy confession from this week? With the kids being gone and the TV remote being all mine, I got hooked on King of the Hill. That has to be mentally unhealthy.
Finally, do you want to know something mentally healthy for me this week (since I didn't do anything physically healthy at all)? Check this picture out.
(Note to self: It might be a good idea to remove sandals before trying to get some sun.) But look at that! And yes, I was hiding my toes nails with the straps because they are in serious need of a trim and new polish.
And because I didn't do good with suppers this week, I now present you with the supper that looked like barf! This is Coconut Curried Chicken.
What you need:
2 lbs. chicken breasts (free range)
1 can coconut milk (full fat)
2 c. broccoli
1 c. water chestnuts
1 white onion
2 Tbsp. curry powder
4 cloves garlic, minced
1 tsp. ginger, minced
1 tsp. cinnamon
sea salt to taste
In a large skillet, add coconut milk, chicken, broccoli and onion. Cook on med/high for 15 min. Add curry powder, garlic, ginger, cinnamon and sea salt. Reduce heat to med/low and cook for 15 more min. Makes 4 servings. Source.
I'm pretty sure I didn't do anything terribly wrong to the recipe, but for some reason it looks so much better on the site I got it from (just click source to see).
If you remember, that meal didn't go over too well. Which means you finally get to see the 3rd and final rating picture! I hope to keep this picture off of here from now on. I think I'm a pretty decent cook so enjoy this picture now because unless I drastically mess up a recipe in the future, this is the only time it will be seen!

Curry dishes rarely look as good as the photos. Still, I think I could eat a curried dog turd. Maybe it's just an acquired taste.

I would hide my toenails too. It seems I am choosing to grow the polish off of them rather than have them redone. Yikes! I am going to a weddig tomorrow, so I'd better do somthing about that!

It felt good to read your post-- I know! but wait for it-- beeecauuuuse we ate at Cheesecake factory last night and I seriously ate enough food for three people. including cheesecake. and the most exercise i had this week was walking to the pool :)
I feel like there should be a rule that weeks where you don't feel good shouldn't count!!!! unfortunately I don't feel like our bodies would comply...

And, really, it's been a healthy week around here (even for being on vacation), except I haven't worked out either. I even dragged Jillian on the plane with me in hopes that is she was staring me down I wouldn't forget about her ... :-)
I hope you all feel better soon! Seems like right when the weather gets nice the cold and sinus season start. I love the flip flop picture . . that is the best tan. And your hubby is too funny in that picture, oh well not everything end up how we want it huh!

Its ok to not be healthy one week..you weren't feeling good and had no kids...you will hop back on next week:) We all deserve a little break every once and a while. when i got to the part with the recipe i first saw the picture and started laughing because i knew it was the barf dinner! and then i got really excited because i knew there'd be a great superman picture! :-)
i had a AWFUL week too. i ate fast food at least once every day. sometimes two times. and when it wasn't fast food one day it was hot dogs and mac n cheese. i feel like my body needs a detox! thank goodness for a new week!
